Most companies give you a limited time to exercise your options after you leave the company (usually somewhere in the 90 day range.)
If the company you are leaving is not yet public, historically your options have either been to purchase your vested options outright, pay the tax consequences, and wait for a liquidity event or allow the option to puchase expire. Now, there are multiple companies that may be interested in helping you execute your options or even liquidate shares.
If you are looking to exercise your shares, funding models usually take the form of a loan. These can either be paid back monthly similar to a loan from any other bank or may only be due when a liquidity event happens. They will charge interest and/or a percentage of your upside in the event of liquidity.
