- 1 LB Raw Bison diced
- 1 TBSP Dijon Mustard
- 1 TBSP Minced Garlic
- 1/2 Cup Chives
- 1 TBSP Worcestershire Sauce
- 3 TBSP Capers
- 2 TBSP Olive Oil
- 2 Avocado, cubed
- 1/2 Cup Shallot, minced
- Sprouts (bedding)
- Sea Salt, to taste
- Pepper
- Lightly lubricate Shaping Cylinder with Extra Virgin Olive Oil
- Mix all the shit excluding sprouts and avocado.
- Place 1/3 into Shaping Cylinder, press with spoon to create slight offset on side
- Place Avocado, also creating opposite side offset (think: presentation & Insta)
- Place remaining mix on top. Flatten and compact.
- Drizzle light Worcestershire Sauce artistically on plate, very little.
- Place bed of sprouts in center
- Behold, Bison Tartare on top
