- 1/4 cup of butter
- 2 large baking potatoes
- 1 lb. ground sausage
- 1/2 medium onion, diced
- 1 4.5oz. can of green chiles
- 1 cup shredded sharp cheddar cheese
- 8 eggs
- 1 cup of milk
- black pepper (to taste)
Preheat oven to 350°F. Place butter in 9"x13" baking pan in oven until butter is melted. Shred potatoes and wring in a towel to remove all the moisture you can.. Mix in butter and press into the bottom of the pan. Bake about 20 minutes - until browning on the edges. In large skillet brown sausage and drain. Spread sausage on top of potatoes. Sprinkle chiles and onion over sausage. Poor 1 cup of shredded sharp cheddar cheese over chiles and onions. Crack 8 eggs in a big bowl and whisk. Add milk. Add black pepper to taste. Pour mixture evenly over pan. Cover with foil and refrigerate over night.
The next morning, preheat oven to 350°F. Bake casserole covered at 350°F for 60-75 minutes - until eggs in center of casserole are fully cooked.
