This is my favorite recipe - I've been using it since I was 5 (so, 22 years), and it has never let me down! Best part is, the dough is completely safe to eat!
Makes 2.5 dozen (given how tasty the dough is, I usually come out with just under 2 dozen...)
- 2/3 cup smooth peanut butter (JIF or Peter Pan work best)
- 1 14.oz can sweetened condensed milk (Borden brand works best; store brands tend to dry out quicker)
- 2 cups Jiffy baking mix
- Small bowl of granulated sugar
- Preheat oven to 375 F
- In a large bowl, mix peanut butter and sweetened condensed milk until smooth
- Mix in Jiffy 1/4 cup at a time, making sure to mix out any lumps
- Roll slightly-larger-than-tablespoon balls by hand; roll in sugar to coat and transfer to baking sheet
- Flatten balls by cross-hatching with a fork
- 8 minutes, or until very lightly brown on bottom (add 1 min if you prefer crispier cookies)
- Remove from oven; allow to cool on pan for 5 min
- Transfer to wire rack to continue cooling, or enjoy warm and gooey!
