- Set cream cheese out to soften (up to 45 min in advance)
- Preheat oven to 375 F
- 1 1/2 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- Prepare springform pan with nonstick baking spray, then with a round of parchement paper in the bottom
- this makes it sooooooo much easier to remove and begin eating later)
- Mix all ingredients in a medium bowl
- Press in to bottom of pan
- Chill while making rest of the recipe
- 3 8oz. packages cream cheese (regular; I made the mistake of using organic once and the consistency was all wrong)
- 1 1/2 cup sugar
- 1/8 teaspoon salt
- 4 eggs
- 1 teaspoon vanilla extract
- In a large bowl, blend cream cheese, sugar, and salt; beat until fluffy
- Add eggs one at a time, beating well after each
- Beat in vanilla
- Pour on to crumb crust
- Place springform pan on a baking sheet in oven
- Bake for 50min or until firm in center
- Remove from oven and let stand for 15min
- Reset oven to 450 F
- 2 cups sour cream
- 1/2 cup sugar
- 2 teaspoons vanilla extract
- optional 1 teaspoon lemon extract
- Combine ingredients in a medium bowl
- Spread over top of cheesecake
- Bake for 10 minutes
- Allow to cool completely
- Chill completely
