Cinnamon Ice cream with apples

## Cinnamon Ice cream | |
### Ingredients: | |
caster sugar 110 g | |
cinnamon stick 1 pc | |
cream 500 ml | |
egg yolks 5 | |
ground cinnamon 2 tbs | |
milk 250 ml | |
### Cookware: | |
frying pan | |
saucepan | |
bowl | |
wooden spoon | |
cream maker | |
### Steps: | |
1. Roast the ground cinnamon in a dry frying pan for a couple of minutes on medium heat | |
2. Place cream, milk roasted ground cinnamon and cinnamon stick into a medium heavy-based saucepan and heat until mixture just starts to simmer. | |
3. Beat egg yolks and caster sugar in a bowl until pale and thick. Strain cream mixture and slowly whisk cream into the egg mixture. | |
4. Clean saucepan and return mixture back to a low heat. Stir constantly with a wooden spoon, without boiling, until mixture has thickened and coats the back of the spoon. | |
5. Pour mixture into a heatproof bowl, cover and refrigerate until well chilled. | |
6. Pour into ice cream bowl. Set ice cream maker to desired setting and churn. |
